Approach

How KONGRA approaches the diagnostic

A bakery line is a chain: proofing, forming, baking and cooling all affect the same product. When a bake goes wrong, KONGRA looks at the whole chain rather than assuming the oven is at fault.

Oven-side checks include door and hinge alignment, thermostat and thermopile behavior, burner and ignition condition, rack rotation, airflow and steam where fitted, and temperature calibration against measured chamber readings.

Mechanical equipment — mixers, sheeters, rollers and dividers — is checked for drive and belt condition, bearings, guards and interlocks, gearbox and lubrication state, and control response. Somerset dough-processing equipment and Excalibur bagel-divider requests are covered with model verification before parts selection.

Preventive maintenance is where bakeries gain the most: cleaning, calibration, wear items and documented findings before a failure lands in the middle of a production run.

Sveba-Dahlen and Gemini are examples of equipment serviced; naming them implies no affiliation or authorization.

Dough processing

Sheeters, rollers and bagel dividers

For dough-processing machinery, the model plate matters as much as the symptom. KONGRA separates equipment identification from general service concerns before recommending parts.

Documentation

Real equipment, documented diagnostics

Sveba-Dahlen C152 commercial rack oven with its door-hinge area exposed during hinge service.
Completed hinge service documented
Sveba-Dahlen C152 door and hinge service access

During a completed Sveba-Dahlen C152 rack-oven service, two customer-supplied door hinge assemblies were replaced. The door was supported and removed as needed, then reinstalled and aligned; closing and alignment were checked, the oven was reassembled, and a final operational check was performed.

FAQ

Frequently asked questions

What bakery equipment does KONGRA service?+

Deck and rack ovens, proofers and retarders, dough sheeters, planetary and spiral mixers, dividers and rounders, and the refrigeration that supports a bakery production line.

Our bakes have become inconsistent — is that a repair?+

Often it is calibration, airflow or door sealing rather than a failed part. Chamber temperature is measured against the set point and against actual product position before anything is replaced.

Do you work around production hours?+

Scheduling is arranged around your production window where possible. Contact KONGRA with your equipment and bake schedule and we will propose the least disruptive slot.
