Conveyor Oven Not Cooking Evenly

Uneven bake is a pattern, not a single fault. Where on the belt it happens, and when in the day, narrows the question far more than the complaint itself.

What the symptom actually tells you

On an impingement conveyor oven, the product is held in a heated chamber for a measured time while shaped air streams reach it from above and below. Three things therefore decide the result: how long the product is inside, how hot the chamber stays while loaded, and how the air is arranged as it arrives. An uneven result is usually a statement about one of those, and the pattern tells you which.

Operating variables can imitate a heating fault convincingly. A new product spec, colder product entering the oven, denser loading, a changed programme or a belt time someone adjusted last week can each produce a bake that looks like a failing oven. Recording the product and programme history alongside the equipment behaviour is what turns a vague complaint into a reproducible pattern.

Model and deck identity come before any procedure. Configurations differ in controls, belt arrangement and air-finger layout, and documentation written for one model does not describe another. Note the model and, on stacked installations, which deck is affected and how the other deck behaves with the same product.

Which bake pattern matches yours

These are categories to narrow the question before a visit, not a remote diagnosis. Confirmation requires on-site measurement.

  • A consistent pattern across the belt width — one side or the centre differs
    A position-related question: air arrangement, plenum condition and chamber behaviour across the width, measured under load rather than inferred from the product.
  • First batch of the day is fine, results drift during the busy period
    Points toward temperature recovery while loaded. Note how many products are running and how the result changes as the period continues.
  • One deck of a stacked installation differs from the other
    Assessed as a comparison. Same product and programme through both decks gives a far more useful record than a description of the worse one alone.
  • Bake time or belt behaviour has changed from what you used to run
    A measurable change. Record the original setting and the setting in use now; transit time is verified on site against what the control reports.
  • It started right after a cleaning or a strip-down
    Reassembly and component position are reviewed against the model's documentation, together with anything that was removed and refitted.

What you can safely observe yourself

These are normal operator observations from outside the oven, with nothing dismantled.

Owner observations
  • Note the model and, for stacked ovens, which deck is affected
  • Photograph a typical affected product, showing where on the belt it ran
  • Record the programme, set temperature and belt time in use, and the previous settings if they changed
  • Note product and loading history: supplier changes, frozen versus chilled, batch size and spacing
  • Note whether the problem is constant or appears only during the busy period
  • Note the date of the last cleaning or strip-down and whether the pattern started after it
Do not attempt
  • Do not remove, rearrange or refit air fingers or plenum components to even out the bake
  • Do not make live adjustments inside the chamber or with panels open while the oven is running
  • Do not keep raising temperature or extending belt time as a permanent workaround — record it instead

  • Chamber temperature measured under working load, not only at idle
  • Air-finger and plenum arrangement checked against the documented configuration for that model

  • Each deck of a stacked installation assessed separately with the same reference product
Model and scope boundaries
  • Gas and electric configurations differ; documentation for one does not describe the other
  • Gas and electrical work is performed only within KONGRA's legal license scope, or coordinated with properly licensed independent contractors
  • Ventilation and hood performance is a separate trade and a separate assessment
  • Parts availability on older ovens can limit repair; KONGRA will say so rather than quote around it

Frequently asked questions

Could this be the product rather than the oven?+

It can be, and operating variables are capable of imitating a heating fault: a different dough or topping supplier, colder product going in, heavier loading, a changed programme or a new belt time. That possibility is reviewed alongside the equipment, and neither is assumed first.

One deck of our stacked oven bakes differently. Is that one fault?+

Stacked decks are assessed independently. They have their own belts, airflow arrangement and controls, so a difference between decks is recorded as a comparison — same product, same programme, both results — rather than treated as a single machine-wide problem.

Can we adjust the air fingers ourselves to even it out?+

Please do not. Finger and plenum arrangement is specific to the model and configuration, and dismantling or rearranging it changes the very thing that has to be measured. Record what you see and leave the arrangement as it is for the visit.
