How KONGRA approaches the diagnostic
Most restaurants juggle several vendors: one for the ovens, another for refrigeration, another for the dishmachine. KONGRA works as a single technical contact across those systems, which shortens the time between a failure and a clear answer.
When more than one machine is down, the useful first step is ranking them rather than fixing them in the order they were reported. Food-safety items come first — anything holding product at temperature, plus warewashing that has stopped sanitizing. Next come the pieces that close a station outright, such as the only fryer or the only oven on a menu built around it. Redundant equipment, cosmetic faults and comfort items are handled last, and are often better folded into a planned visit than into an emergency one.
Coordination matters as much as the ranking. Before a visit we confirm who on site can authorize work, which equipment can be powered down and when, whether a hood or gas shutoff is needed, and what the service window looks like around prep and service. KONGRA does not publish a guaranteed response time — availability is confirmed by phone for the actual day — but the sequence of work is agreed in advance so a single visit covers as much of the list as access allows.
Every visit starts as a paid diagnostic with instruments: measured temperatures, electrical readings, control and sensor behavior, and a check of the installation conditions around the equipment. An estimate follows the inspection, not the phone call.
Where a repair falls outside KONGRA's legal scope — certain gas, refrigerant or electrical work — the work is coordinated with properly licensed independent contractors rather than improvised.
For operators, the practical output is documentation: what was found, what it will cost, what can wait, and what is likely to fail next. For multi-unit and San Jose–area operators, that record is what makes the next capital decision straightforward.
