How KONGRA approaches the diagnostic

Fryers are the hardest-working equipment on most hot lines, and their faults are rarely cosmetic. Ignition roughness, temperature swing and slow recovery all point to systems that need measurement, not guesswork.

Two complaints get described the same way and are not the same investigation. A fryer with no heat never reaches set point at all, and the question starts at ignition, heat supply and the safety chain. A fryer with weak recovery does reach set point when idle but falls away under load and takes too long to come back — there the question is how much heat is actually being delivered, how the control is responding, and what the production pattern is asking of the vat. Say which one you are seeing, and whether it happens only during busy periods.

Gas-side inspection covers burner and orifice condition and cleaning, pilot or electronic ignition behavior, thermopile and safety valve response, and flame characteristics — including delayed ignition, which is treated as a safety-relevant finding.

Temperature control is checked end to end: probe placement and condition, thermostat or controller response, high-limit behavior, and measured oil temperature against set point through a recovery cycle.

Filtration systems, pumps, seals and drain paths are inspected where fitted, since a filtration fault frequently presents as an oil-quality or temperature complaint.

Belshaw and Frymaster are examples of equipment serviced; naming them implies no affiliation. Gas work is performed only within KONGRA's legal scope or coordinated with properly licensed independent contractors.

What is delayed ignition and why does it matter?+

Delayed ignition is a rough or loud light-off caused by gas accumulating before the burner establishes flame. It is treated as a safety-relevant condition: burner and ignition components, gas delivery and flame supervision are inspected within KONGRA's legal scope.

Oil temperature is inaccurate — sensor or thermostat?+

Both are checked, along with probe placement, wiring and controller response, against measured oil temperature.

Are Frymaster or Belshaw named because you are authorized?+
