How KONGRA approaches the diagnostic

A combi oven fault is rarely a single part. KONGRA starts with the unit's stored fault history and run-time data, then confirms what the machine reports against what it actually does under load — steam production, chamber temperature, humidity behavior and airflow.

A combi differs from the rest of a hot line in one important way: it makes its own steam. That adds a water supply, a generator or injection system, a drain and humidity control on top of the heating and airflow shared with a convection oven — which is why the same complaint about cooking results can start in four different places, and why a combi diagnostic takes longer than a straight convection call. Typical themes include temperature and core probe sensors, steam generator condition, the water fill and level system, drain behavior, fan motor and airflow, door contact and sealing, and humidity / ClimaPlus control response.

Generation matters when reading any guidance. SCC and SelfCookingCenter units, CombiMaster units and the later iCombi range differ in controls, cleaning system and published procedure, and floor-standing and tabletop units differ again. The readable current manufacturer manual available to us is the UK iCombi Pro floor-unit original instruction for 20-1/1 and 20-2/1 (V17, January 2026); it is a general reference only and its electrical and cleaning specifications are not transferable to a US or tabletop machine. What applies to your oven is established from its own model and serial number on site.

Cleaning-system complaints are inspected as a system: CleanJet / Care cycle behavior, dosing path, water quality and scale, drain flow and any interlocks that keep the cycle from completing. An interrupted cleaning cycle is worth reporting precisely — at which stage it stops, whether the chamber was hot, and whether the cycle can be restarted.

For San Jose and nearby Bay Area kitchens, scheduling is shaped by the equipment rather than by a promised window: the unit needs a cool-down before it can be opened, and the water supply and power have to be isolated with the operator. Parts availability is checked against the exact model after the inspection identifies what is needed. A diagnosis is not stated before the unit is inspected; you receive findings, options and an estimate after a paid inspection.
