Commercial Oven Not Heating

No heat, not enough heat and uneven heat are three different faults reported with the same sentence. Sorting out which one you have — and on which type of oven — is most of the diagnostic work.

What the symptom actually tells you

Commercial ovens fail to heat for reasons that depend heavily on energy type. An electric oven that is not heating raises questions about supply, element condition, contactors and controls. A gas oven raises questions about supply and pressure, the ignition and flame-proving sequence, and the safety devices that will correctly refuse to allow heat when a condition is not met. Controls, sensors, door and airflow conditions can affect either. Establishing gas or electric before anything else is therefore not a formality, even though it does not by itself narrow the fault to one part.

The oven type matters nearly as much. A deck or rack oven, a convection oven, a conveyor oven and a ventless high-speed oven all behave differently when something is wrong, and their controls report differently. A conveyor oven that appears to be underheating may in fact be running the wrong belt speed; a ventless unit may be limiting itself because of a condition in its own filtration or cooling path.

One assumption is worth discarding immediately: that a running fan means the heating side is working. Fan circuits and heating circuits are separate. An oven can hum, light up, display normally and run its blower while no element is energised and no burner has lit.

If you smell gas, stop and treat it as an emergency

Do not operate the equipment. Do not use light switches, phones or anything that could create a spark in the area, and do not attempt to locate the leak. Leave the area, get others out, and from a safe distance outside contact your gas utility's emergency line and emergency services. Arrange equipment service only after the situation has been made safe by the appropriate authority.

Differentiate

Three patterns, reported as one complaint

These are categories to narrow the question before a visit, not a remote diagnosis. Confirmation requires on-site measurement.

  • No heat at all
    On an electric oven this raises supply, element, contactor and control questions. On a gas oven it raises supply, ignition, flame-proving and safety-device questions.
  • Heats, but recovers slowly
    Points at reduced heating capacity, loading pattern, door sealing, door-open frequency or airflow rather than at complete loss of heat.
  • Uneven cooking across the cavity, deck or belt
    Points at airflow, fan behaviour, individual zone or element condition, rack or belt loading, or calibration — often with the oven still reaching setpoint.
  • Display or control shows an alarm, code or unusual state
    The control is already reporting something. Photograph it exactly as shown; the wording and any code are where the technician starts.
  • Fan runs but no heat is produced
    Confirms a fan circuit has power and confirms nothing about heating. Useful to state, but not evidence that the electrical side is healthy.
  • Only one zone, deck or section is affected
    Narrows the investigation to that section's own heating and control, and away from anything common to the whole oven.
  • Started after a power event, gas work or a service call
    Puts supply condition, restart behaviour and settings ahead of component failure in the order of investigation.

What you can safely observe yourself

These are things kitchen staff can note from the operator side of the machine. None involve panels, resets or ignition.

Owner observations
  • Confirm whether the oven is gas or electric from the rating plate
  • Record the mode, setpoint, timer state and whether a start was actually accepted
  • Note whether the door closes fully and latches, and whether the gasket is intact
  • Note whether the fan runs, and whether that is normal for the mode selected
  • Photograph any alarm, code, icon or unusual display state exactly as it appears
  • Note whether all zones, decks or belt sections are affected or only one
  • On a conveyor oven, note the belt speed setting as well as the temperature setting
  • Note anything that changed recently — a power event, gas work, a move or a prior service visit
Do not attempt
  • Do not attempt a reset, a relight, or any ignition workaround
  • Do not remove panels, covers or access doors
  • Do not bypass, jumper or defeat any interlock, limit or safety device
  • Do not adjust gas valves, regulators, air shutters or pressure settings
  • Do not keep restarting the oven repeatedly to try to make it catch
  • Do not operate the equipment at all if you smell gas — follow the safety notice above

Model and scope boundaries
  • Electric and gas ovens are different diagnostics; gas work is regulated and performed only within KONGRA's legal license, insurance and practical service scope
  • Convection, deck, rack, conveyor and ventless high-speed ovens differ in controls and construction
  • Ventilation hood systems, gas piping modification and building electrical work are separate licensed trades

Frequently asked questions

The fan is running, so the oven has power. Doesn't that rule out an electrical fault?+

No. A running convection fan tells you a fan circuit has power; it says nothing about whether the heating elements are energised or whether a gas burner has successfully lit and proved. Heating and fan circuits are separate, and an oven that sounds completely alive while producing no heat is a common and entirely consistent picture.

We get heat, but the oven takes far longer than it used to. Is that the same problem?+

Report it as its own symptom. No heat at all, slow recovery, and uneven cooking across the cavity are three different patterns and they narrow the investigation in three different directions. Slow recovery in particular often relates to how the oven is being loaded and how often the door is opened, alongside any component condition.

Does it matter whether the oven is gas or electric?+

It changes almost everything about the diagnostic, and it changes what is regulated work. Say which it is, and if you do not know, photograph the rating plate — it will state the energy type, the supply requirements and the model.

I can smell gas. What should I do?+

Treat it as an emergency, not a service call. Do not operate the equipment, do not use switches, phones or anything that could create a spark in the area, and do not try to find the source. Leave the area, get others out, and from a safe distance outside contact your gas utility's emergency line and emergency services. Only call for equipment service after the situation has been made safe.

Can we reset it or relight it ourselves?+

No. Do not attempt resets, relighting, panel removal or any ignition workaround. Beyond the direct hazard, a reset can clear stored fault information and restart the sequence, which can hide the very behaviour that would have identified the fault on the first visit.
