Commercial Dishwasher Final Rinse Temperature Is Too Low
A low final-rinse reading is a serious thing to see and a slow thing to interpret. Before any part is discussed, three questions have to be separated: what the machine is documented to do, what the indicator is reporting, and when in the cycle you looked.
What the symptom actually tells you
Commercial dishmachines are not all built to the same arrangement. A high-temperature machine sanitizes with heat and relies on incoming hot water plus, on many installations, a booster; a chemical-sanitizing machine works at a lower temperature and relies on dosed sanitizer instead. What counts as a correct final-rinse temperature is defined by your machine's own manual and by the health authority for your site — not by a general figure, which is why none is given here.
Timing is the next thing to establish. Machines wait: a tank has to recover, a booster has to satisfy. A low display during warm-up is different from a low reading while the final rinse is actually dispensing; record the cycle stage and follow the model's operating requirements. A reading taken at first use in the morning, one taken at peak on back-to-back racks, and one taken after a long idle period are three different observations. Record which one you have, and whether the machine was still in its wait period.
Then there is what is actually being read. A dial or display can differ from a measured temperature at the rack, a gauge can drift, and a probe can be reading somewhere other than where you assume. That gap is itself a finding worth measuring, and it is measured on site rather than argued about remotely.

What you can safely observe yourself
These are normal operator observations from outside the machine, using its own indicators and your existing food-safety procedure.
- Record the make, model and serial number from the rating plate
- Establish from the manual whether the machine is high-temperature or chemical-sanitizing, and whether a booster is fitted
- Note the reading, where you read it, and at what point in the cycle
- Note whether the machine was still waiting between cycles when you looked
- Note whether the reading is low at first use, at peak, or all day
- Check the incoming hot water supply is on and that nothing else nearby has changed
- Note when the machine was last descaled or deep-cleaned to the manufacturer's method
- Photograph the display or gauge exactly as it reads
- Do not bypass, jumper or defeat any thermostat, interlock, control or safety device
- Do not adjust a booster, thermostat or control setting to make a reading look correct
- Do not change sanitizer dosing to compensate for a temperature reading
- Do not remove panels or work on a powered machine
- Do not decide the sanitation question yourself — report it through your food-safety procedure

- Booster operation and heating behaviour assessed where fitted
- Cycle sequence and wait behaviour observed through complete cycles
